With our elimination diet for our kiddo in full swing we are adding a lot of potatoes to our meal plans. I like sweet potato fries and sweet potato pie, but I don’t always love sweet potatoes in other things (said the dietitian…GASP!). I know I need to give sweet potatoes more of a chance so I decided to check out Sweet Potatoes by Mary Frances Heck. I love traditional potato rolls so I am excited to try the sweet potato pull apart rolls (with rice flour due to our wheat elimination) and can’t wait to try the recipes with an Asian flair. This book has great food photography and food styling so all of the recipes look amazing!

Book Review: Essential Instant Pot Cookbook

We are trying out new recipes each week and try to have a good rotation between oven/stove top/slow cooker/Instant Pot now that we have this handy tool in our kitchen. Hubby gave a wary eye when I told him I wanted an Instant Pot and he is now a believer! When I saw “The Essential Instant Pot Cookbook” by Coco Morante (#1 new release on Amazon!) I had to have it! We are doing a trial elimination diet for one of our kiddos (more on that to come) and there are a ton of recipes in this book that fit within our new restrictions. This book has a so many recipes that will help us add to our elimination diet meal planning schedule starting with the cauliflower mashed potatoes (because…vegetables, naturally), quinoa porridge with pepitas and honey (whole grains for the win!), beluga lentil salad with Italian vinaigrette, red lentil soup with sumac and some pulled pork adobo for the hubby!

We are following an elimination diet for at least six weeks so this book will be a life saver! Even though it isn’t designed to be, it is a book with many recipes that are free of wheat, eggs, dairy, nuts and artificial food coloring. Thank you, Coco Morante!

Book Review: Holiday Cookies

Every year I think, “this will be the year I really start baking Christmas cookies!” And then January arrives and I have slid into a new year with no cookies made in our casa. I try to blame it on being a dietitian and not wanting the sweets around, but I love the idea of making memories with my kids as we spread some icing and pretty sugars on delicious cookies. This year I am armed with Holiday Cookies by Elisabet der Nederlanden and will be able to make beautiful cookies that even my skill level (aka beginner baker) can pull off. I am planning to start with the dark chocolate hazelnut fudge (how can I screw that up?!) and cookie place cards that I know my kids will love to make…and eat!

Book Review: Daring to Hope

Such a beautiful story of an unlikely family, Daring to Hope, by Katie Davis Majors was exactly the book I needed to read in this season of my life.  It is a story not just of hope, but of basking in the everyday of today because it will not be the everyday for long.  As a mom of young children I loved reading Katie’s story and realizing that even though I am not a mother of a baker’s dozen of adopted children, this God-loving mom and I have a surprising amount in common.   I loved being able to read about Katie’s family and how she has found the light in dark times.  Katie Davis Majors is truly inspiring and I know when I need a dose of loving God in the everyday moments and struggles I will keep coming back to this book.
